    Wash and dry the fresh produce. Halve the tomatoes. Thinly slice the scallions, separating the white bottoms and hollow green tops. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the beef. Cook, stirring frequently and breaking the meat apart with a spoon, 3 to 4 minutes, or until lightly browned. Carefully drain off and discard any excess oil.

    Add the halved tomatoes, sliced white bottoms of the scallions, and pepper sofrito (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until slightly softened. Add the tomato paste. Cook, stirring constantly, 30 seconds to 1 minute, or until combined. Add the gnocchi and 1/2 cup of water (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until the gnocchi are heated through and the beef is cooked through.

    Add the crème fraîche and half the cheddar and monterey jack (you will have extra); season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until combined and cheese is melted. Turn off the heat. Serve the finished gnocchi garnished with the sliced green tops of the scallions. Enjoy!
