    Prepare the bok choy & cook the shrimp
    1 Prepare the bok choy & cook the shrimp

    Wash and dry the bok choy; cut off and discard the root ends, then thinly slice. Pat the shrimp dry with paper towels; place in a bowl. Season with salt, pepper, and half the curry powder. Toss to coat. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the seasoned shrimp. Cook, stirring occasionally, 3 to 5 minutes, or until opaque and cooked through. Transfer to a plate. Cover with foil to keep warm. Wipe out the pan.

    2 Cook the bok choy

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the sliced bok choy; season with salt and pepper. Cook, stirring occasionally, 1 to 2 minutes, or until slightly softened. Add the tomato paste, tomato achaar, remaining curry powder, and as much of the red pepper flakes as you'd like, depending on how spicy you'd like the dish to be. Cook, stirring frequently, 30 seconds to 1 minute, or until thoroughly combined.

    Meanwhile, using your hands, carefully separate the noodles. To the pan, add the noodles, cream (shaking the packet before opening), and 1/2 cup of water (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring frequently, 2 to 3 minutes, or until combined and the noodles are heated through. Turn off the heat. Serve the finished noodles topped with the cooked shrimp. Garnish with the sesame seeds. Enjoy!
