    • 1 Bell Pepper
    • 1 Zucchini
    • 2 oz Feta Cheese
    • 2 Tbsps Mascarpone Cheese
    • ½ Tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)
    • ⅓ cup Salsa Verde

    Prepare the ingredients
    1 Prepare the ingredients

    Wash and dry the fresh produce. Small dice the zucchini. Cut off and discard the stem of the pepper. Halve lengthwise; remove the ribs and seeds, then medium dice.

    2 Cook the shrimp

    Pat the shrimp dry with paper towels; place in a bowl. Season with salt, pepper, and the spice blend; toss to coat. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the seasoned shrimp. Cook, stirring occasionally, 3 to 5 minutes, or until opaque and cooked through. Leaving any browned bits (or fond) in the pan, transfer to a plate. Cover with foil to keep warm.

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the diced zucchini and diced pepper; season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until softened. Add the pasta, salsa verde (carefully, as the liquid may splatter), mascarpone, and 1 tablespoon of water; season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until combined and the pasta is heated through. Turn off the heat.  Serve the finished pasta topped with the cooked shrimp. Garnish with the feta (crumbling before adding). Enjoy!
