    • 1 Bell Pepper
    • 1 Zucchini
    • 3 Tbsps Chimichurri Sauce
    • 1½ oz Feta Cheese
    • 2 Tbsps Mascarpone Cheese
    • ½ Tbsp Weeknight Hero Spice Blend (Onion Powder, Garlic Powder, Smoked Paprika & Whole Dried Parsley)

    15-Min Chicken & Chimichurri Pasta

    Prepare the ingredients
    1 Prepare the ingredients

    Wash and dry the fresh produce. Small dice the zucchini. Cut off and discard the stem of the pepper(s). Halve lengthwise; remove the ribs and seeds, then medium dice.

    2 Cook the salmon

    Pat the salmon dry with paper towels. Season with salt and pepper on both sides. Season only on the skinless side with the spice blend. In a large nonstick pan, heat a drizzle of olive oil on medium-high until hot. Add the seasoned salmon, skin side down. Cook 5 to 7 minutes, or until the skin is browned and crispy. Flip and cook 1 to 2 minutes, or until lightly browned and cooked through. Leaving any browned bits (or fond) in the pan, transfer to a plate, skin side up. Cover with foil to keep warm.

    The USDA recommends a minimum safe cooking temperature of 145°F for fish.

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the diced zucchini and diced pepper(s); season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until softened. Add the pasta, chimichurri sauce, mascarpone, and 1 tablespoon of water (or 2 tablespoons for 4 servings); season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until combined and the pasta is heated through. Serve the finished pasta topped with the cooked chicken. Garnish with the feta (crumbling before adding). Enjoy!
