    • 10 oz Cooked Russet Potatoes
    • 4 oz Grape Tomatoes
    • 2 oz Shredded Cheddar & Monterey Jack Cheese Blend
    • ¼ cup Cilantro Sauce
    • ⅓ cup Guajillo Chile Pepper Sauce
    • ¼ cup Sour Cream
    • 2 tsps Cornstarch
    Prepare the ingredients & cook the chorizo
    1 Prepare the ingredients & cook the chorizo

    Wash, dry, and halve the tomatoes. Pat the potatoes dry with paper towels; place in a bowl. Add the cornstarch; season with salt and pepper. Toss to thoroughly coat. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the chorizo. Cook, stirring frequently and breaking the meat apart with a spoon, 5 to 6 minutes, or until browned. Add the guajillo sauce (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring frequently, 2 to 3 minutes, or until combined and the chorizo is cooked through. Transfer to a bowl. Wipe out the pan.

    2 Make the skillet

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the coated potatoes (discarding any excess cornstarch before adding) and halved tomatoes. Cook, stirring occasionally, 3 to 4 minutes, or until lightly browned. Add the guajillo chorizo; stir to thoroughly combine. Top with the cheddar and monterey jack. Loosely cover the pan with foil and cook 1 to 2 minutes, or until the cheese is melted. Turn off the heat.
