Seamus Mullen Pairing Picks

Seamus Mullen Pairing Picks

  • Price $45.00

Our Test Kitchen chefs have hand-selected wines to pair with goop's Seamus Mullen's upcoming recipes.

For the week of 3/9, the 2017 Tendu Vermentino pairs perfectly with the Pesto Salmon & Roasted Vegetables with Olives, Capers, and Pesto. This juicy wine, bursting with acidity, pairs nicely with the unctuous roasted salmon and the briny Mediterranean combination of olives and capers.

The week of 3/16, the Ryme 2015 Syrah/Grenache complements the Middle Eastern Style Chicken with Harissa Roasted Vegetables. The Rhone-style blend of Syrah and Grenache reveals spiced notes amidst a red fruit background, complementing the fragrant and gentle flavors of the dish's tomato-based sauce.

And the week of 3/23, the 2016 Matthiasson White Wine highlights the flavors of the Ginger Shrimp with Broccoli, Snow Peas, and Bok Choy. The winemaker added Italian grapes to a tried and true Bordeaux-- a blend that elevates the ginger flavors in the dish, and balances the meal with acidity and minerality.

Collection includes 3 x 500 mL bottles (2/3 of a standard-size wine bottle) featuring:
  • 2017 Tendu Vermentino: Steve Matthiasson has a champion’s pedigree: He put in time at Napa luminaries Stag’s Leap, Spottswoode and Araujo, then went on to be named Winemaker of the Year by both the San Francisco Chronicle and Food & Wine for his high-end, low-production reds and whites. His label Tendu, a French play on “tension” (winemaker lingo for “juicy”), focuses on overlooked vineyards. Steve found one he could use to make a Vermentino as bright and delicious as any from Italy. Tendu Vermentino is a classically styled version of Italy’s refreshing white wines from the island of Sardinia, but with a California attitude—perfect for transporting you to whichever coastal paradise is your pleasure. .
  • Ryme 2015 Syrah/Grenache : For Ryan and Megan Glaab, winemaking is a matter of the heart. They met while working at Australian winery Torbreck, known for its bold reds made from century-old vines. Ryan and Megan—Ryme, get it?—returned home to California and became a winemaking tour de force. This robust Rhône-style red, made using some of California’s oldest vines, is not only a wine the Glaabs love (when they disagree, they create separate “his” and “hers” wines), it’s a warm reminder of how it all began. The Ryme Rhône-Style Red is what you would expect from a fruit-forward California red, yet it has the spicy intensity typical of a southern Rhône red such as Châteauneuf-du-Pape. It’s Old World meets New World.
  • 2016 Matthiasson White Wine: One afternoon in 2003, in-demand viticulturist Steve Matthiasson arrived home and said to his wife, Jill, “You won’t believe how good the grapes I tasted today were.” They decided that if Steve could help others grow grapes for great wines, together they could make incredible wines of their own—such as this unique white blend that critics love every vintage. The New York Times’ Eric Asimov once proclaimed Matthiasson White so good, “[f] don’t care which grapes went into it.” The backbone of this wine, sauvignon blanc and semillon, is a tried and true Bordeaux blend, and Matthiasson turned this classic on it's head with the addition of a couple Italian grapes.
