The secret to keeping your knives in tip-top slicing shape is all in the sharpener. Stage 1: For new or very dull knives, Stage 1 is your knife-sharpening starting point. Eight-inch blades should take about four seconds to pull through, while shorter blades should take less time.
Stage 2: Pull the blade through the left slot of Stage 2, and then through the right slot of Stage 2. Before moving on, confirm the presence of a burr along the knife’s edge.
Stage 3: Achieve a razor-sharp edge with just one or two pairs of pulls in Stage 3. Additional pulls will result in a very refined edge, ideal for gourmet food preparation. Fewer pulls are better for knives used to cut fibrous foods.
